Inside a Vietnam Frozen Durian Processing Facility

Four key stages observed:

1. Reception and ripeness sorting
– Fresh durian graded by ripeness and external defect.
– Growing-area code and packing-facility code verified for China-bound product.
– Brix sampling at intake to confirm sweetness specification.

2. Deshelling and pulp extraction
– Manual deshelling to preserve pulp integrity.
– Pulp separated from seed; quality-checked for colour and texture.
– Strict hygiene controls in the open-cut handling zone.

3. IQF / block freezing
– Pulp blast-frozen at -35°C to -40°C to reach core -18°C rapidly.
– IQF preserves individual pulp segments; block format for bulk processing buyers.
– Temperature logs maintained throughout.

4. Packing, traceability and documentation
– Vacuum or sealed packing in food-grade material.
– Each batch traceable to growing-area code and harvest date.
– Phytosanitary and MRL test records prepared for China customs clearance.
