Freeze-dried tropical fruit should be sourced as a distinct product category. It is not the same as soft-dried fruit, hot-air-dried fruit or fried fruit snacks.
1. Define the exact product form
– Fruit type and variety where relevant: mango, dragon fruit, jackfruit, pineapple, banana, durian or other tropical fruit.
– Whole pieces, slices, cubes, chunks, powder or inclusions.
– Single fruit or blended product.
– Retail, foodservice or industrial ingredient format.
2. Fix the physical and sensory specification
– Cut size and size tolerance.
– Colour range and browning tolerance.
– Texture and crispness expectation.
– Maximum fines or broken-piece tolerance.
– Rehydration behaviour if the product is intended for further processing.
3. Define moisture and stability controls
– Moisture target and test method.
– Water-activity target where relevant to the buyer’s shelf-life and microbiological plan.
– Maximum exposure time between drying and final sealed packing.
– Shelf-life validation under the intended storage condition.
4. Food-safety parameters to verify
– Microbiological specification appropriate to the product and destination market.
– Pesticide-residue limits based on the importing market.
– Heavy metals, mycotoxins or other contaminants where applicable.
– Allergen and cross-contact controls if the facility handles nuts, dairy or other allergenic materials.
– Foreign-material control and metal detection.
5. Packaging points buyers should specify
– High moisture-barrier and oxygen-barrier packaging suitable for a low-moisture product.
– Inner bag, pouch, carton or bulk format.
– Seal-integrity checks and lot coding.
– Use of desiccant, oxygen absorber, nitrogen flushing or vacuum only where these are part of the approved product specification.
– Label language, net weight, production date, best-before date and storage statement.
Market context
Vietnam’s fruit and vegetable exports reached a record USD 1.12 billion in July 2026, while processed products represented about 30.85% of the sector overall and nearly two-thirds of exports to the EU. (Source: Vietnam News/Vinafruit, 8/2026)
Vietnam’s role in the global supply chain
Vietnam has a broad tropical fruit base, but freeze-dried product reliability depends on the factory’s ability to control raw-material condition, pre-freezing, vacuum drying, moisture exposure, hygiene and barrier packaging consistently from lot to lot.
Before selecting a Vietnamese freeze-dried fruit supplier, buyers should verify:
– Raw-material traceability and maturity control.
– Documented moisture and water-activity targets.
– Batch-level drying and release records.
– Microbiology, residue and contaminant testing relevant to the destination market.
– Packaging barrier performance, shelf-life evidence and lot-code traceability.
